Late Night Laksa !..!





Alright ya'll.  This was a simple Laksa to make.  I started by de-shelling the Green Prawns and setting aside.  I cooked the noodles and drained and put in the bowl ready to serve.  I then Started frying the Laksa Paste in the Pan with oil and Garlic.  I then added the Onion and Prawns.  Throw in Coriander, Mushrooms and fresh yellow chilies and stir through.  Then pour in Half a can of Coconut Cream/Milk and 1 cup of water.  Don't bring to boil.  Or you will bruise the coconuts!  Now season to taste and add Palm sugar.  Then more coriander and Basil leaves.  BAM !..!

BACON ICE-CREAM... you heard me!

RECIPE FOR BACON MAPLE ICE-CREAM:

So first its Candy Bacon time.  Smother it with Maple Syrup and Brown sugar.  Then put it in the oven.  Until cooked to your Bacon Liking.

Separate egg yolks into a bowl.  Set aside and start your custard.

Your basic custard is butter - brown sugar - milk - cream.  i made a small amount this time but consult a few different Ice-Cream recipes for larger amounts and measurements.  But only use half of the cream/milk.  the other half put into another bowl and sit over iced water.  These two will meet again later.

So... Depending on how much bacon you made, cut up some into little tiny Bacon bits. and the rest into bigger chunks - Then put the big chunks into the custard and let the flavors infuse :)

Once the custard starts to thicken slightly pour a bit of the mixture into the Egg Bowl you put aside earlier and wisk gently.  More like a fold.  Then pour back into the pot and bring back to heat until the custard is coating your spatula in a slightly thick manor :)

Your now going to get a fine siv and pour the custard infused Bacon into the Bowl with the rest of your cream/milk mixture. stiring it through as you push the custard through the siv.

Your now going to pour that mixture into a Metal bowl which you have been freezing.  And then put it back into the freezer and start the timer for 20min.

20min - stir the slightly frozen mixture up off the bottom and sides.  Put back in for another 20min.

20min - now it's time to add the Bacon Bits.  Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and
Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits and Bacon Bits.

Repeat the Freeze/Stir through method until you get your desired ice-cream thickness.

NOW EAT THA ASS OUT OF THAT BACON MAPLE ICE-CREAM!!!!!


Now I don't think I really need to explain much else.
I didn't have an Ice-Cream maker so as you can see I improvised and used my Rice Cooker bowl as the freezer bowl.

Burger by the River


This was a delightful Hamburger I had down at Boardwalk Cafe on the Brisbane River.  A little Pricey but really good.  Everything was stacked right and the cheese was melted just right.  There was also this Avocado & Relish sauce inside that was awesome.
