Cutloose Maranara


I am a big fan of the Maranara.  This is my little take on it.  I used thick cut home made pasta. whole cherry tomatoes,  parsley, sweet basil, olive oil, red onion and brown button mushrooms.  With Scallops, Prawns, Squid.  For the base sauce I use Roma Tomatoes and Garlic (you can roast the tomatoes with a crazy sugar glaze but it takes away from the seafood a little).  For a different spin.  I cook the pasta in butter water.  1 tablespoon of butter / 4cups of water.  Enjoy
