Summer Disco Bang 3

For the Last 5 years I have been listening and enjoying the New School Disco sound from all corners of the globe.  and Three years ago I decided to put together a mixtape every year showcasing the Bangers of that year just passed.  This is the 3rd installment in the series with many more to come.  So enjoy and let it remind you of the year that was and enjoy the summer with it blasting from your poolside speakers.

Cutloose Maranara

I am a big fan of the Maranara.  This is my little take on it.  I used thick cut home made pasta. whole cherry tomatoes,  parsley, sweet basil, olive oil, red onion and brown button mushrooms.  With Scallops, Prawns, Squid.  For the base sauce I use Roma Tomatoes and Garlic (you can roast the tomatoes with a crazy sugar glaze but it takes away from the seafood a little).  For a different spin.  I cook the pasta in butter water.  1 tablespoon of butter / 4cups of water.  Enjoy
